Midweek Meal Planning 3/24/16

Welcome back to Midweek Meal Planning for the week of 3/24/16! It’s more traditional to meal plan on the weekend, but since our Chicago grocery deals mostly flip on Wednesdays and since midweek is when many of us start to run out of steam, we buck the trend here. In Midweek Meal Planning, we plan dinners for the rest of the week while also looking back to see how we’ve done so far.

Here’s our week

Somehow I missed posting Midweek Meal Planning last week — but I assure you, we did eat, and eat plenty. 🙂 So let’s pick up again like that blip never happened…

  • Sunday: Leftovers.
  • Monday: Low Carb Mozzarella Meatballs. After I posted the recipe Sunday, everyone wanted a repeat… With broccoli, fruit, and garlic bread for the non-low-carb contingent.
  • Tuesday: This cheesy chicken potato bake in the Crock Pot (I need to come up with a better name, and better photos!) & salad, while low carb MashupDad finished off the meatballs.
  • Wednesday: The kids had leftover chicken potato bake, and MashupDad and I had Chipotle later on (used the free burrito coupon that came in the mail recently).
  • Thursday: Got a pack of cheap “party wings” at Pete’s and am going to play with this low carb hot wings recipe some more.
  • Friday: In all honesty, I may punt to breakfast for dinner… we will see. This weather is really causing a whole allergy/sinus thing here and I think it’s sapping my cooking creativity, lol.
  • Saturday: Salmon on the grill.

Spring Break so we were gone Fri-Tuesday and at mostly Costco food at our family suite in Indianapolis. Went to the kids museum there 3 days in a row in the mornings so the girls can be back for naps. Older kids swam... was a great little getaway and that museum is fantastic! Wed: Costco Marie Callander Chicken pot pies and kale salad (Costco, love this salad). Thurs: Costco rotisserie chicken added to cream of chicken/wild rice soup and sandwiches. Fri: My Jr. High Guy turns 13 today! OH MY! Making meatloaf and one of his favorites, green bean casserole (lol). Mashed potatoes. Saturday: Birthday celebration dinner with family at our house and bought sliced beef for sandwiches and motz sticks. My older son turns 16 on Monday so it is a big year!

Soapbox Tray, great idea to go to Costco for meals! I never thought of that! Healthier by far and convenient. i am going to do that when we visit our kids at college. thanks for the idea. And yes, the museum is great.

Sunday: Quick pasta and jar sauce Monday: ate at our Science fair - they had nacho, potato, hot dog stations. ;-) My 13yo won 3rd place!! Tuesday: Turkey meatloaf and rice pilaf Wednesday: Leftovers and large baked potatoes with toppings Thursday: Chicken stir fry Friday: Soup of some kind and homemade bread Saturday: tacos or something quick since we are having Easter at our house and I'll be cooking alot

I know you have food restrictions in your house so not sure this works for your family, but the recipe is below. Thanks for all you do!

Chicken Fajita Soup - Slow Cooker Serving: 4 Ingredients 1 pound boneless, skinless chicken breasts 2 (10.75 ounce) cans condensed cream of chicken soup 1 cup salsa 2 cups frozen corn 1 (15 ounce) can black beans drained and rinsed 1 1⁄2 cups water 1 teaspoon ground cumin 1⁄2 teaspoon dried cilantro Optional Toppings: cheddar cheese sour cream diced tomatoes green onions cilantro diced avocado tortilla strips

Directions: Spray your slow cooker with cooking spray. Add chicken to the bottom of the slow cooker. In a medium sized mixing bowl, mix cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro. Pour over the top of chicken. Cook on low for 4-6 hours. Remove the chicken and shred with two forks. Place back into the slow cooker, heat through, serve with your favorite toppings.

Sun: Slow Cooker Chicken Fajita Soup; Crescent Rolls Mon: Mac 'n Cheese Casserole; Dilled Peas Tues: Tacos; Refried Beans Wed: Cincinnati Chili over Macaroni; Cornbread Thurs: Bottom Round Roast ($9.99 at Target, but had $5 off peelie, so $4.99) Fri: French Onion Soup; Cheddar Bay Biscuits (last meatless meal, yea!)

My Target also had 32 oz. packages of boneless, skinless chicken breasts marked down to $4.99 ($4.74 w/Cartwheel) and Laura's Ground Beef 1 lb. packages with $2 off peelies. Great deals esp. w/Target's $10/$50 offer this week on groceries. My freezer will be stocked for a while!
