Main dishes for the week Sunday cooking 12/30
Posted at 6:27 pm by rachel in recipes, sunday scratchupsStill trying to get back in the habit of cooking several main dishes on Sunday so that we’re not scrambling for last-minute meal ideas during the week. (Although — tomorrow morning I think I’m also going to pick up some steak for our family New Year’s!
)
So for this week:
- Above, MashupDad grilled both hot and mild Johnsonville Italian sausage from Ultra Foods this week, $.98 each after an old $2.00 printable.
- In the crockpot this morning, I cooked up a ham that was at one point free or near-free at Jewel — just put a layer of brown sugar on the bottom, put ham in flat side down, put a little more brown sugar on top, and cook on low for 5 hours. MashupDad nicely sliced it up this afternoon, and it’s in the fridge for later.
- In the oven right now: Roast chile-lime chicken and some baking potatoes. (Except the peppers from our garden weren’t serranos, so kind of guesstimated on how many to use, didn’t seed them, and didn’t bother with the zest.) Made with a big clearance 7-lb+ Perdue roaster from the freezer ($3.80-something at some point) and a couple of 5/$.98 limes I picked up at Pete’s yesterday. Oh! Pete’s also had containers of those mini-bananas the kids love for $.98 — there were 12 tiny bananas in the one I got, so not a bad deal for those.

WOW ham sounds great ,I wound up with 3 Cooks hams from Meijer !Will try your easy tasty way.Can you still slice OK ? wondered if it might fall apart from cooking that long .
It doesn’t fall apart — you want to be careful not to cook it too long though as it will dry out. If it’s a smaller ham, check it after four hours or so to see if it is pulling apart easily and seems done.
I also cooked up a spare ham today (got it from Meijer though). Made scalloped potatoes to go with it. Sliced up the rest and it’s in the fridge for sandwiches or whatever.
Thanks for the reminder. I am trying to make a meal schedule for the week to get through my stuff in the freezer.
That ham sounds delish, but not really low carb friendly.
It’s not super low carb friendly but MashupDad eats it anyway, lol.
Anyone who wants an easy crockpot meal, this is what we had tonight. It probably serves 6 as we have a family of four and have enough leftovers for 2 people.
2-3 frozen chicken breasts
1 can corn, drained
1 can black beans
1 jar salsa (or use homemade if you would prefer).
Put all in the crockpot on low for 8 hours. Shred the chicken with a fork. Serve over brown or white rice.
Optional: Add sour cream and shredded cheese on top (this is the way my family prefers!)
So easy. So good. And so cheap!

I’ve never tried Ham in the crockpot, I almost bought one today but didn’t. Will try that the next time I get one. I’m making pork chops, quinoa and asparagus for tonight, Appy’s tomorrow and Ribs in the crockpot on Tuesday!

@Emily — I make a very similar one with chicken, taco seasoning, jar salsa and cook on low for 10 hours — Mr. 10 doesn’t like corn in it, but maybe I’ll try the black beans.
We made a rib roast from the Jewel deal a week or so ago and also some Chicken Soup to use up some celery and carrots that needed some attention.
We now have beef for sammies this week and will freeze some packets.
Same with the soup. We love our food saver system when we make a lot of food like today.
I made Ham Potato and Cheese soup (the recipe calls for water, but I made ham stock from the Christmas ham bone and used the stock instead of water. I was looking for something different than the usual Split Pea with Ham, and this is definitely a keeper! http://allrecipes.com/Recipe/Ham-Potato-and-Cheese-Soup/ ). This soup is excellent as is, but I think I will add some broccoli and carrots next time I make it. I also made a Rib Roast that I got at Dominicks last week with the price match from Jewel. Then every year for New Years Eve, we stay home and have a bunch of different appetizer type foods, so I made those things which we will also be eating this week. And lastly, I made turkey stock from the Christmas turkey bone (yep, we had turkey and ham for Christmas!). The turkey stock will become turkey soup next weekend
I cooked for 80 people between Friday and Wednesday over Christmas and I did 2 hams in the crockpot. Tasted exactly like when done in the oven. Just set on high for 4 hours!
I’ve been eating leftover cookies and pie for the past week… does that count as cooking?
