Tropical Traditions sent over a whole gallon of unsweetened shredded organic coconut — really! Coconut lovers rejoice, since you can order your favorite in bulk over at Tropical Traditions; plus, shredded coconut is even on sale as I type right now.

So I started thinking of heavy-on-the-coconut recipes to test this out with, finally settling on: Gluten Free Dairy Free Whole Egg Coconut Macaroons. This easy-peasy recipe is perfect for Passover or for any time of year, and is also a great simple gluten and dairy free dessert to whip up — with no need for special flours or lots of steps.
