I have a great new giveaway for you guys today, sponsored by Tropical Traditions! I know that many of you use coconut oil for various purposes, and Tropical Traditions recently sent over a jar of their popular organic Gold Label Virgin Coconut Oil to try out and tell you guys about.

MashupDad is an enthusiastic convert, now regularly taking coconut oil in his morning coffee (along with his usual creamer!). It melts quickly and dissolves right in, and he quite enjoys the extra bit of flavor and texture it adds. Plus, since MashupDad is also AtkinsDad, he’s a big fan of zero carbs.

In addition to being zero carbs, Tropical Traditions Gold Label Virgin Coconut Oil is also USDA organic, and contains no cholesterol or sodium. So, we went with the low-carb theme here and cooked up a couple of recipes for MashupDad and Dairy Free Junior High guy, both featuring their virgin coconut oil!

First up, we have Low Carb Dairy Free Coconut Oil Fudge, which both the large and the smaller boy pronounced just fantastic. With just a few ingredients, this was super quick and easy to make, and it’s so nice to have recipes on hand that are both low carb and allergy friendly.

Since we had everything out and plenty of virgin coconut oil left, we also cooked up some Nutty Dairy Free Low Carb Coconut Cocoa Bark that same afternoon — it’s all about choices! The Tropical Traditions Gold Label Virgin Coconut Oil also provided a great base for this easy low carb and dairy free treat, and we’ll definitely be using this in our cooking a lot more from now on.
