Things to know about these ALDI meal plans

A few notes before we get started:

  1. I try not to repeat main dish recipes more often than once a month, but you will see favorite easy recipes come up again in these weekly ALDI meal plans as the same meats and produce items come up again on sale. Part of the fun of meal planning lies in mixing old stand-bys with something new each week.
  2. If one or more of these recipes isn’t to your taste or if you have other ingredients to use, adapt this ALDI meal plan to your family’s preferences or use the ideas here as a supplement to your own meal planning for the week.
  3. This week’s ALDI meal plan reflects prices from the current week’s ad (running 4/30-5/6 in Sunday ad markets and 5/3-5/9 in Wednesday ad markets). Non-advertised prices were collected on 5/3/17 at my local store in the Chicago suburbs, but can vary by location & region. In either ad market, shop any time through Saturday and start cooking on Sunday 5/7/17.

So let’s get ready to make six complete dinners for a family of four, for $60.00 out the door!

ALDI meal planning week of 5/7/17 – 5/13/17

I’m assuming here that you already have pantry basics like cooking oil and spices. Read through the recipes before you shop to make sure you have the necessary pantry staples on hand.

Six Easy Dinners from ALDI for $60.00

ALDI meal plan — Start cooking 5/7/17

  • Sunday: Chipotle chicken wraps with kicked up avocado cream. Side: Half the bag of tortilla chips (reserve the other half for Wednesday), pineapple slices, and four sliced hard-boiled eggs.
  • Monday: Vegetarian chipotle naan pizza. Side: sliced mango and kiwi.
  • Tuesday: Chicken burrito bowls topped with queso quesadilla, chopped green onions, sour cream, and chopped avocado. Side: Quick tomato-cucumber salad — Chop the rest of the Roma tomatoes & toss with chopped cucumber, half a medium onion, sliced, a little red wine vinegar, olive oil, oregano, and salt & pepper to taste.
  • Wednesday: Crunchy tortilla chicken fingers (double recipe and use the other half of the bag of tortilla chips to coat, the last 2 lbs of chicken, and the other half of the jar of chipotle-lime salsa for dipping). Sides: Parmesan spinach penne pasta (use the box of penne & the rest of the bag of spinach from Sunday), plus kiwi slices.
  • Thursday: Sausage quiche. (Cook and break up half a roll of breakfast sausage, 1/4 of a medium onion, diced, and 1/2 tsp crushed pepper in a large skillet over medium heat, until sausage is nicely browned. Press one prepared pie crust into a plate, crimp edges, and spread cooked sausage in the bottom of the pie crust. In a separate bowl, whisk together six eggs, 1 tsp paprika, salt & pepper to taste, and 1 cup half & half. Pour egg mixture over sausage, then top with 1.5 cups queso quesadilla. Cover entire quiche with foil and bake at 400 degrees for one hour until set, removing foil for last ten minutes to allow edges to brown. Allow quiche to set for a few minutes before slicing.) Sides: English muffins and sliced cantaloupe.
  • Friday: Pan seared pork chops. Sides: Easy rice pilaf and steamed broccoli.
  • Saturday: Leftovers, family pizza night, eat out, or date night.
