Easy one pan Sriracha Chicken & Veggies Sheet Pan Dinner!

Welcome to the August 14, 2016 edition of Sunday Scratchups: Your weekly recipe from scratch around grocery sales or generally affordable foods. This week, how about a yummy yet simple One Pan Sriracha Chicken & Veggies recipe?

Why? Well, Sriracha and soy sauce were both on sale this week, broccoli & other veggies have been seasonally cheap at the produce stores, and these all came together in one sweet & spicy easy sheet pan dinner recipe that can be on your table in less than 30 minutes start to finish!

All these came together with a clearance pack of chicken tenders I found at Target a while back in an easy & flavorful weeknight dinner recipe. (I was a little surprised, though, to notice that Gold ‘n Plump chicken tenders are solution added, because I don’t think their regular chicken breast is. Did you guys know this?)

Easy One Pan Sriracha Chicken & Veggies

Ingredients

1/4 cup olive oil
1/4 cup Sriracha
2 tsp sesame oil
2 tsp soy sauce
2 tsp honey
2 Tbsp minced garlic
14 oz chicken tenders
One medium red onion, chopped into eighths
One large broccoli crown, chopped into large florets
8 oz baby bella mushrooms, halved
A few cauliflower florets
Chopped fresh parsley, optional

Directions

Make your marinade by combining olive oil, Sriracha, sesame oil, soy sauce, honey, and garlic in a small bowl. Place veggies and chicken in a large bowl. Pour marinade over and toss to coat.

Line a rimmed cookie sheet with parchment paper and spread out chicken and veggies in a single layer. Roast at 425 degrees for 10 minutes, flip, and cook for another 9 minutes. Garnish with fresh parsley, if desired.

Yeah, Sriracha-y probably isn’t a real word… but it really should be! No worries; this easy sheet-pan dinner recipe isn’t especially spicy since the honey and oil balance out the Sriracha so that you just get that little bit of a kick here. You could also change up the veggies if these aren’t to your liking, but don’t mess with the mushrooms if you can avoid it because the marinade really shines through on those. 😉 Do try to keep the veggie pieces around the same size so that they cook evenly, however.

Thanks for replying! It's really my fault for not reading the label -- I'd never purchased the tenders before, so assumed they were the same as the chicken breast I'd been used to purchasing. :)
