Double Chocolate Sunbutter Cookies — Gluten Free, Dairy Free, Allergy Friendly!

Welcome back to Sunday Scratchups, your source for weekly recipes from scratch around grocery sales and affordable ingredients. This week I picked up some clearance Sunbutter, ALDI has their baking supplies on sale for the holiday season (including cocoa powder and sugar), and we recently saw a price drop on dairy free Enjoy Life chocolate chips on Amazon.

Jars of clearance Sunbutter clearly cry out to be made into cookies, but I was in the mood for something a little more, shall we say, chocolate-y than the basic three ingredient allergy friendly Sunbutter cookies recipe. So I added a little bit of this, a little bit of that, and voila! Double Chocolate Sunbutter Cookies were born. Still super easy, though, for the holidays or any time of the year.

* Note — This recipe does contain egg, but you can easily replace with a flax egg or other egg substitute if you have an egg allergy in your family.

Double Chocolate Sunbutter Cookies

Ingredients

1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 cup creamy Sunbutter
1 egg (or egg substitute)
1/2 tsp vanilla
1/4 cup dairy free chocolate chips

Directions

Mix sugar, cocoa powder, Sunbutter, egg, and vanilla until well blended into a stiff dough, then stir in chocolate chips. Roll into balls, then roll in granulated sugar and place on greased cookie sheet or silicone baking mat.

Press each cookie down and flatten slightly with the back of a fork, then bake for 14 minutes at 350 degrees, flipping tray around at 10 minutes. Let cool on cookie sheet for one minute, then remove to cooling rack to cool the rest of the way. Store in airtight container at room temperature. Makes 18 cookies.

Can’t get much easier than that!

OK, we went from three ingredients to six by making these chocolate — but still stayed gluten free and dairy free, with no special flours, butter substitutes, or Xanthan gum involved. Good deal! And, such a good flavor; this turned out to be just the right balance of chocolate to Sunbutter.

Dairy Free Wheat Free Junior High Guy gave these two thumbs up, and I recommend them warm out of the oven with coffee for an afternoon treat.
